Description

WINEMAKING

The base wine spends about 4 years on yeast lees, after which it is tiraged and undergoes secondary fermentation in the bottle, also known as “traditional method”. This creates the carbonation that naturally occurs during fermentation. This style of sparkling winemaking is labor intensive and takes many years to produce a single bottle but the results give great complexity from the yeast autolysis and incredible flavour and length with a lovely delicate bead.

VINEYARDS

The Pinot Noir and Chardonnay grapes used to make this sparkling wine are sourced from family vineyards in the Adelaide Hills and Clare Valley. Both regions provide cool nights in which this variety is suited to, especially in making sparkling wine as the lovely fresh, natural acidity is retained.

TASTING NOTES

A crisp, aperitif style with fresh brioche, pear and citrus notes. The palate has toasted almond character with a fine mousse and creamy complexity. It has incredible length and persistence, with a lively finish.
